Originally invented by Chinese migrants brought to Cuba as laborers in the 1850’s, Asian-Latin cuisine blended Chinese and Caribbean ingredients and cooking techniques. The Cuban Revolution in 1959, however, got in the way and deprived the world to meet what was meant to be today’s Cuban cuisine. Many left the island and concentrated in Miami and New York. Havana’s Chinatown is still one of the oldest and largest in the Americas

Luis Pous, a well acclaimed Cuban chef, started his successful career at Escuela Nacional de Artes Culinarias de La Habana, before moving to the United States.
Author of “Litle Palm Island Cook Book”, Pons has been guest chef at James Beard House in New York. His experience in the kitchens around the world include The Nobel House Spa & Resort, The Dining Room in Little Palm Island Resort & Spa, George V Hotel in Paris, Dior House in , as well as the successful Asia de Cuba in London, New York and United Arab Emirates.
Calle Dragones is his interpretation of what Asian influenced Cuban food would have become today if Cuba had been allowed to evolve and take its culinary potential to its fullest. With the relaunch of this brand, Chef Pous is taking the opportunity to showcase his heritage and experience in the context of Jeffrey Chodorow’s original vision for Asia de Cuba.
A carefully crafted menu designed by Chef Luis Pous features a new take on Cuban cuisine with Asian elements in a deep exploration of cultures and local ingredients. His endless efforts to recreate Old Havana, through food and dining, have driven Pons, a creator above all, to develop new techniques and flavors as he reimagines what Asian influenced Cuban food would have become today if Cuba had been allowed to evolve and fulfill its culinary potential.
